Zucchini w/Mustard Dressings







Another great zucchini recipe....with mustard dressings !
Ingredients:

* 4 small to medium zucchini, peeled or not, thinly sliced
* 3 tablespoons mayonnaise
* 1 tablespoon Dijon mustard
* 1 tablespoon plain yogurt
* 4 drops Tabasco sauce
* salt and pepper
* 1 tablespoon fresh or frozen chives, chopped

Preparation:
Place zucchini slices in a serving bowl.

In a small bowl, blend the mayonnaise and mustard; stir in the yogurt, Tabasco sauce, salt and pepper, and the chopped chives. Pour over the sliced zucchini. Let stand at room temperature for 15 to 20 minutes before serving. Serve as an appetizer or condiment with a mealand the zucchini recipe is ready...a nice one !

Zucchini Casserole

Zucchini casserole recipe with tomato sauce and bacon....a great combination ! A nice zucchini recipe to try !

Ingredients:

* 6 slices bacon, diced
* 1 large onion, chopped
* 4 cups sliced zucchini
* 1 can (8 ounces) tomato sauce
* 3/4 teaspoon salt
* 1/4 teaspoon pepper
* 15 buttery crackers, crushed
* 1/2 cup grated Parmesan cheese

INSTRUCTIONS
Fry bacon in a large skillet until just cooked but not crisp. Add onion and cook until onion is softened. Stir in zucchini and tomato sauce; season with salt and pepper. Pour zucchini mixture into a greased 2-quart casserole and sprinkle with crushed buttery crackers and Parmesan cheese. Cover and bake at 350° for about 30 minutes, until hot and bubbly...hmmm nice taste of zucchini..enjoy ! Serves 6.

Zucchini w/Tomatoes & Cheese










Try this nice zucchini recipe....a classic one !
Ingredients:

* 4 small zucchini
* 2 large tomatoes
* 1/2 cup finely chopped onion
* 3 cloves garlic, finely minced
* 1/2 teaspoon salt
* 1/2 teaspoon dried leaf basil
* 1/8 teaspoon black pepper
* 3 tablespoons olive oil
* 8 ounces fontina cheese, shredded
* 1/4 cup shredded Parmesan cheese

Preparation:
Heat oven to 350°. Grease a 2 1/2 to 3-quart baking dish.

Cut ends from zucchini and cut in 1/2-inch rounds. Cut cores from tomatoes and slice about 1/2-inch thick. Cut each slice into quarters. Combine the zucchini and tomatoes; sprinkle with the onion, garlic, salt, basil, and pepper. Toss to blend; drizzle with the olive oil and toss again to coat the vegetables. Turn the vegetables into the prepared baking dish. Bake for 25 minutes. Top with cheese and continue baking for 10 to 15 minutes longer. Enjoy this fabolous zucchini ! great taste !

Zucchini & Stuffing Casserole

Try this zucchini casserole....a must try recipe !

INGREDIENTS:

* 4 medium zucchini
* 6 tablespoons butter, divided
* 1/2 cup shredded carrot
* 1/2 cup chopped onion
* 2 1/2 cups herb seasoned stuffing cubes, divided
* 1 can (10 3/4 ounces) condensed cream of chicken soup
* 1/2 cup sour cream

PREPARATION:
Cut zucchini into 1/2-inch slices. Put zucchini into a saucepan; cover with water and a little salt. Cook until tender; drain well and set aside.

In the same saucepan, melt 4 tablespoons of the butter; cook carrot and onion until tender. Remove from heat and stir in 1 1/2 cups of the stuffing cubes and the soup and sour cream. Add zucchini and gently stir to combine. Turn mixture into a 1 1/2-quart casserole. Melt remaining butter and toss with remaining stuffing cubes. Sprinkle over top of casserole. Bake at 350° for 25 to 35 minutes. The zucchini is ready to serves 6 to 8 person. Nice taste !

Zucchini & Onion Dip

Zucchini And Onion Dip



..another amazing zucchini recipe to try...nice one !

Ingredients:

* 2 tablespoons margarine
* 2 medium zucchini, sliced
* 1 medium onion, sliced
* 1 envelope unflavored gelatin
* 1/4 cup cold water
* 1 cup skim milk, heated to boiling
* 3/4 cup light sour cream
* 1/3 cup grated Parmesan cheese
* 1 tablespoon minced fresh dill or 1 teaspoon dried dillweed
* 1 teaspoon salt
* dash red pepper

Preparation:
In a skillet, melt margarine over medium heat; cook zucchini with onion, stirring occasionally, 7 minutes or until very tender; set aside. In blender, sprinkle unflavored gelatin over cold water; let stand 2 minutes. Add hot milk and blend at low speed until gelatin is completely dissolved, about 2 minutes. Add sour cream, cheese, dill, salt, pepper, then zucchini mixture. Blend on high speed until smooth, about a minute. Pour into bowl; chill for about 2 to 4 hours, or until set. Whisk until smooth, then serve with bread sticks, crackers, or assorted vegetables.
Makes 3 1/2 cups of zucchini onion dip....enjoy it for meals !
